Heirloom refers to a group of traditional Ethiopian varieties, not always genetically classified. These plants express an extraordinary aromatic diversity, often floral and fruity, with lively acidity and great complexity. They form the basis of Ethiopia's most iconic wines and greatly enhance the terroir.

In the yellow honey process, the ripe cherries are first selected and allowed to rest whole for a short time, then removed from the pulp, leaving approximately 50% of the mucilage adhering to the parchment. The beans are then slowly dried on raised beds in the shade for approximately two weeks. This intermediate process between natural and washed allows for greater interaction between the mucilage sugars and the beans, without the risk of fermentation associated with a strong natural process. The result is a sweeter and more structured profile than a washed one, but cleaner and more defined than a natural one, with ripe fruit notes, good juiciness, and a complex and balanced cup.
