Il caffè Specialty non esprime il massimo delle sue caratteristiche immediatamente dopo la tostatura. Nel corso delle settimane successive, il profilo aromatico evolve: la pressione dei gas residui diminuisce e la percezione sensoriale tende a stabilizzarsi, rendendo la tazza più coerente, leggibile e bilanciata nelle diverse modalità di estrazione.
Questo caffè è stato tostato il 28 maggio e si trova in una fase di equilibrio aromatico avanzato: ancora qualitativamente integro e pienamente godibile, ma al di fuori dell’intervallo temporale che adottiamo per la nostra vendita standard.
Per questa ragione è proposto a condizioni agevolate, senza alcun compromesso sulla selezione della materia prima, sulla tostatura o sulla tracciabilità del prodotto.

Castillo is a variety developed in Colombia to ensure high disease resistance, particularly rust. Modern selections offer clean, well-defined profiles, with medium acidity and good sweetness. It is a technical variety, designed to combine quality and agricultural sustainability. Caturra is a natural mutation of Bourbon, selected for its compact plant and high yield. In the cup, it offers clean and balanced profiles, with good acidity and moderate sweetness. It's a very popular variety in Latin America, prized for its versatility and sensorial clarity. Typical is one of the oldest Arabica coffee varieties and is the basis of many modern selections. In the cup, it expresses elegance and cleanliness, with delicate acidity, a light body, and sweet, floral notes. It is prized for its refinement rather than its intensity.
