In the "Vivid" process, ripe cherries are hand-selected and placed in airtight containers in a carbon dioxide-rich environment. This initial carbonic maceration phase fosters the development of an intense fruitiness and a distinctive aromatic complexity. Halfway through the process, the cherries are processed to remove the fruit; the beans then continue drying with a washed finish. The result is a blend of the depth and juiciness of cherry processing and the clarity, defined acidity, and clean finish typical of a washed coffee.
