Geisha is one of the most renowned varieties in the world of specialty coffee, known for its extremely aromatic and floral profile. Originally from Ethiopia and made famous by Panama, it offers elegant cups with notes of flowers, citrus, and delicate fruit, a light body, and great cleanliness. It is a sought-after variety for those seeking finesse and sensorial precision.

The Aril process is a hybrid method developed by Jamison Savage at Finca Deborah. Cherries are hand-selected at full ripeness, and the whole fruits are transferred to airtight tanks infused with CO₂ for over 100 hours. pH, temperature, and carbon dioxide levels are constantly monitored for stable and controlled fermentation. Once fermentation is complete, the cherries are depulped, washed in fresh water, and dried on three-tiered African beds shielded from direct sunlight, a structure designed to protect the beans from temperature fluctuations and UV rays. The coffee is then left to rest to stabilize the water content and further develop its flavor profile.
