INFO ABOUT COFFEE, PRODUCER AND TERRITORY
TEJO is a coffee decaffeinated directly in Colombia through a special, natural process. While the beans are still green, an ethyl acetate solvent is used, which is derived from the fermentation of cane sugar.
The process works by soaking the green coffee in a solution of A.E., which binds with the chlorogenic acid salts of the coffee and allows the caffeine to be removed. The coffee is then removed from the solvent and vapourised at low temperature to remove traces of A.E. The final product keeps its aromatic integrity as well as a fruity smell but does contain almost no caffeine.
The coffee beans contain a maximum of 0.01-0.03% in caffeine.
