Acaia is a selection of the Mundo Novo variety, characterized by large beans and uniform ripeness. In the cup, it offers sweet and smooth profiles, with moderate acidity and notes ranging from dried fruit to chocolate. It is prized for its consistent quality and balanced structure, especially in Brazilian contexts.

In the natural process, cherries are dried whole, with the pulp still attached to the seed, encouraging greater interaction between fruit and kernel. This method enhances sweetness, aromatic intensity, and ripe fruity notes, resulting in more enveloping and structured flavors than washed cherries.
In this case, drying takes place in ventilated static containers ("static boxes"), where the cherries remain still and the air circulates from bottom to top, with a progressively controlled temperature always below 40°C. Slow and controlled drying, followed by a period of rest in the dried cherry, allows for more precise, fruity, and clean profiles, far removed from the classic, heavier Brazilian naturals.
