INFO ABOUT COFFE, PRODUCER AND TERRITORY

The La Bolsa farm has been owned by Dr Jorge Vides since 1958; previously it was not a coffee-producing area.

Jorge has won numerous awards for coffee production and his service to the Huehuetenango region, so much so that some local hospitals bear his name.

La Bolsa competed in the COE (Cup Of Excellence), achieving second place with a record score of 94.98 points.

La Bolsa is situated between two mountains that maintain a very stable humid micro-climate, which together with the rich limestone soil gives a unique cup profile, syrupy body and lots of malic and citric acidity.

This coffee is fermented for 18-24 hours and when it is cleaned of mucilage it is then graded into channels and left to soak overnight.

A section of the farm is a reserve. It promotes biodiversity, reduces wind exposure as well as soil erosion.

Inga trees are used as shade trees and fix nitrogen in the soil as an essential element for plant growth and thus drupes.
